Tips for seafood from Annis

Grilled mackerel

Mackerel is perfect on the grill. Prepare the fish by cleaning it and stuffing the belly with lemon slices and fresh herbs such as dill or parsley. Then grill the mackerel over medium heat for approx. 4-5 minutes per side, depending on the size. Start with the skin side down to get a crispy surface. Feel free to grill some lemon slices as well, which you can serve with and squeeze over the fish when serving.

When it comes to the side dishes, mango salad and new potatoes are good. Make a mango salad with good flavors such as mango, avocado, red onion and coriander. Cook small new potatoes and toss in butter and dill.

Crayfish

How about serving crayfish? It is also delicious on the grill. Start by splitting the crayfish in half lengthwise. Then brush the meat with a mixture of butter, garlic and herbs. Fire up the grill on a high heat and grill with the meat side down for 3-4 minutes until the meat is opaque and slightly golden. Turn and grill the shell side for a further 2-3 minutes.

For the crayfish, you can serve grilled asparagus with olive oil and parmesan, and a fresh salad. For example, mix arugula, fennel and orange slices. Aioli is also good.

Side dishes

Other general side dishes are grilled vegetables such as peppers, squash or aubergine brushed with olive oil and seasoned with salt and pepper. Or corn on the cob with butter and spices. Potato salad is a classic, how about making it with a twist with capers and red onion? Another tip is quinoa salad with cherry tomatoes, cucumber, feta cheese and a lemon-dijon vinaigrette. Focaccia with rosemary and sea salt is also suitable for most dishes.
