Pinnekjøtt is Annis' great pride! They make their own skewered meat from lamb from Rønn Gård and Sygard gryting. Annis coarsely salts and hangs it up for curing, what gives the skewered meat good taste is good time and proper curing. The lamb sides become completely dry, and get a white surface that shows that it has been hanging for a long time and that it has been properly cured. Remember that the pork meat may look small when it is so dry, but that it will regain water and weight after rehydration.
